We have a wide selection of North American dried wild mushrooms, usually available year-round. Dried mushrooms are exceptionally delicious. Many European chefs rely on dried wild mushrooms to flavor soups, sauces, stews, and gravies due to the richness they bring to these dishes. Dried wild mushrooms are typically much stronger in flavor than fresh mushrooms, which makes them more economical to use.

Dried mushrooms can also be chipped or powdered in a food processor and used as a rub for meats, vegetables, and fish. The flavors of wild mushrooms are intense and original and vary depending on what they are cooked with or how they are used. They are often said to taste woodsy, carrying the flavor of the earth they grow on. Interestingly, few mushroom recipe books actually describe what different mushrooms taste like, perhaps because different people pick up different aromas or tastes. We invite you to start exploring the taste of our wild mushrooms by sautéing them in butter with shallots until cooked, and then sample them on toast.
